Senz Crunchy Cabbage Salad

I like KFC Coleslaw partly because of cabbage. Cabbage is my favorite vegetable. It's a great food choice for those who are dieting, or watching their weight with healthy way is to eat it raw.

It is also an excellent source of Vitamin K. High in Vitamin K, Vitamin A,C,E and B, an excellent source of dietary fiber and calcium . Cabbage has its Vitamin K plays an important role in helping the body fight against invaders, bacteria and anticancer properties.

You may also try to use Red cabbage. It tastes as good as white cabbage. Red cabbage has six to eight times the Vitamin C than white cabbage. With its rich pigment molecule called flavin or anthocyanins, it's plant pigments, the healthful compounds of flavonoid category. Which have the strongest anti-oxidizing power of 150 flavonoids that may positive influences on a variety of health conditions. Also help boost insulin production and lower blood sugar levels, enjoy a serving at least once a week along with this valuable health benefits and therapeutic value of cabbage.

Try this easy to prepare and crunchy cabbage recipe healthy way is to eat it raw. This is how I make my own type of crunchy cabbage. I think Salad and appetizer likely part of my daily simple dish without messy cooking preparations.

Ingredients:
1 medium head cabbage, shredded
6 shallots, thinly sliced
1 carrot, grated
1/2 cup white vinegar
1 cup Honey Apple Cider Vinegar
1/2 cup white sugar
3 tbsp of salt (for soaking Cabbage, shallots and carrot for 10 minutes)
1 Tbsp. Salt








Shredded cabbage thinly.













Thinly slice Shallots










Grated carrot and ready for use.










Preparation:
1. In a large bowl, combine shredded cabbage, shallots slices and grated carrot with 3 tablespoons of salt, soak it for 10 minutes and wash it thoroughly with water, then pressing out extra water out and ready to use.

*The reason of salting raw cabbage and other ingredients for 10 minutes to draw out some moisture from cabbage and soften the texture as well as concentrate the flavor .


2. Add in Sugar and salt











3. Stir in Honey apple cider vinegar and white vinegar. Combine well with the salad ingredients.








 
 4. Keep refrigerate for 1 hour or more and serve chilled.


Done.....it's simple and easy.
Enjoy it....Taste delicious and crunchy.

Senz's pickles - Lo Bak


I discovered this dish by one of my Korea friend. I realized I seldom meet fat person in Korea. Maybe the pickles stuffs that makes them slimmer?

The most pleasant thing for me to observe is they eat white carrot (Turnip) and seaweed every meal. I can see this dish in their every meal. That kept the Korean trim and slim.

So I did my own concoction. In every meal I must add this dish even traveling. They love it very much. It is not difficult to do.





Method

1. Skin off the white carrot skin and cut it in small cube.

2. In a big bowl, add Vinegar, Sugar, salt and light sauce.
3. Marinate the carrot and added celery pieces with the sauces till well blended.

4. Marinate for 2 hours minimum before serving.
5. Serve cold

It is refreshing dish and good appetizer. Try it today!
